The restaurant will be locally owned and operated by partners John Lim and Adam Pasieka, residents of nearby West Windsor and Cream Ridge, respectively.
Lim and Pasieka also own two other nearby Cheeburger franchises, one in Lawrenceville and one in Hamilton. According to the company website, there are currently eight existing franchises in New Jersey.
Lim said that the pair had been looking at opening a Princeton location for a “long, long time” and finally secured the space after Carousel lost its lease earlier this year.
Lim said he hopes that Cheeburger Cheeburger will fill a niche that other restaurants on Nassau currently do not. According to Lim, the restaurant’s targeted demographic will be young parents with children and teenagers.
Lim also said hopes that the restaurant will become a congregating place for students. At the moment, Nassau Street lacks a restaurant that specializes exclusively in burgers, though Triumph Brewery, Princeton Sports Bar and Grill and Hoagie Haven all have extensive burger options on their menus.
The franchise, which was founded in Florida in 1986, made its name by offering various patty sizes with unlimited free toppings, in addition to milkshakes, fries and onion rings.
The restaurant’s claim to fame, however, is the “Pounder” burger, which weighs 20 ounces before cooking. Customers who finish this burger have their pictures added to a wall of fame.
The burgers will be “about the same price range [as Hoagie Haven],” Lim said, “but people can sit down.” The space will seat over 100, and Lim hopes the 1950s-diner atmosphere will draw people for its “nostalgic feel.”
“It’s fun; it’s lively; it’s bright, unlike typical diners,” Lim said.
